In a large mixing bowl, combine the Spanish green and black olives.

In a separate bowl, whisk together the extra virgin olive oil, fresh lemon juice, fresh orange juice, minced garlic, thyme leaves, espelette pepper, salt, and black peppercorns until well combined.
