Preparation of Olives

    In a large mixing bowl, combine the Spanish green and black olives.

Making the Marinade

    In a separate bowl, whisk together the extra virgin olive oil, fresh lemon juice, fresh orange juice, minced garlic, thyme leaves, espelette pepper, salt, and black peppercorns until well combined.

Marinating the Olives

    Pour the marinade over the olives in the mixing bowl. Stir gently to ensure the olives are well coated with the marinade.
