Method
Prepare Mochi Dough
Mix Ingredients
In a microwave-safe bowl, combine sweet rice flour, granulated sugar, and water. Stir until smooth.
Cook the Dough
Cover the bowl with plastic wrap and microwave on high for 1 minute. Remove and stir. Microwave again for 1 more minute, then stir again. Finally, microwave for an additional 30 seconds until the mixture becomes thick and sticky.
Cool and Dust
Transfer the mochi dough to a clean surface dusted with cornstarch. Allow it to cool for about 10 minutes.
Shape the Mochi
Once cool enough to handle, dust your hands with cornstarch and divide the dough into 6 equal pieces. Flatten each piece into a 3-inch round.
Fill with Ice Cream
Scoop Ice Cream
Scoop strawberry, mango, and green tea ice cream into balls, approximately 1.5 tablespoons each.
Wrap Ice Cream
Place a scoop of ice cream in the center of each mochi round. Pinch the edges of the mochi dough together to seal the ice cream inside, shaping it into a ball.
Repeat Steps
Repeat the process for all three flavors, using two rounds of mochi dough for each scoop of ice cream.
Freeze and Serve
Freeze Mochi Balls
Place the filled mochi balls on a plate lined with parchment paper and freeze for at least 2 hours or until firm.
Serve
Once frozen, serve the mochi ice cream balls immediately or store them in an airtight container in the freezer.
