Preparation
Clean the Calamari
Begin by cleaning the calamari. Rinse under cold water and remove any insides, including the quill and skin. Cut the calamari into rings or leave whole, depending on your preference.
Prepare the Dry Batter
In a bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well to create the dry batter.
Prepare Buttermilk
In another bowl, pour in the buttermilk. This will be used to dip the calamari before coating it in the dry batter.
Frying
Heat Oil
Heat vegetable oil in a deep pan over medium-high heat. You need enough oil to submerge the calamari completely.
Coat the Calamari
Dip each piece of calamari into the buttermilk, allowing excess to drip off, then dredge in the dry batter until fully coated.
Fry the Calamari
Once the oil is hot (around 350°F or 175°C), carefully add the coated calamari to the oil in batches; do not overcrowd the pan.
Remove and Drain
Fry the calamari for about 2-3 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and place on a plate lined with paper towels to drain excess oil.
