Prepare Sushi Rice

Rinse the Rice
Place sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear, about 2-3 minutes.

Cook the Rice
Transfer the rinsed rice to a rice cooker and add 2.5 cups of water. Cook according to the rice cooker's instructions. If using a pot, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low heat until sugar dissolves. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.
Prepare Sashimi and Sushi Fillings

Slice the Fish
Using a sharp knife, slice the fresh salmon and tuna fillets into thin pieces for sashimi. For sushi, you can slice the fish into strips.

Prepare Nori Sheets
Cut nori sheets in half if making smaller rolls or leave whole for larger rolls.

Assemble Sushi Rolls
On a bamboo sushi mat, place a sheet of nori, spread a thin layer of sushi rice over it, then add slices of fish, avocado, cucumber, and cream cheese. Roll tightly using the mat, then slice into bite-sized pieces.
