Preparing the Broth

Make the Dashi Stock
In a medium pot, bring 4 cups of water to a boil. Add dashi powder or kombu and bonito flakes, if using, and simmer for about 5 minutes. Strain and discard solids, reserving the clear broth.

Add Miso
Lower the heat to medium-low. Take a small amount of the hot dashi stock (about 1/2 cup) and mix in 3 tablespoons of miso paste in a separate bowl until smooth. Gradually whisk this mixture back into the pot of dashi stock.

Prepare the Tofu
Cut the tofu into small cubes (approximately 1 inch). Add the tofu cubes to the pot of miso broth and let simmer for about 5 minutes.

Rehydrate Wakame
If using dried wakame, soak it in warm water for about 5 minutes until it expands, then drain and add to the soup.

Add Wakame and Scallions
Add the rehydrated wakame and sliced scallions to the pot. Simmer for an additional 2-3 minutes until everything is heated through.
Serving

Serve the Soup
