Preparation
Prepare the Marinade
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper until well combined.
Marinate the Sea Bass
Place the sea bass fillets in a shallow dish and pour the marinade over the fillets. Ensure the fish is well coated. Cover and refrigerate for at least 30 minutes.
Prepare the Vegetables
While the fish is marinating, trim the ends of the asparagus and wash the cherry tomatoes. Set aside.
Cooking
Roast the Asparagus and Tomatoes
Toss the asparagus and cherry tomatoes with olive oil, salt, and black pepper in a separate bowl. Spread them on a baking sheet and roast in the oven for about 10-12 minutes, or until tender and slightly charred.
Serving
Plate the Dish
Serve the grilled sea bass fillets alongside the roasted asparagus and cherry tomatoes. Drizzle any remaining marinade over the fish for extra flavor.
