Meatballs
Prepare the Meatball Mixture
In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, minced garlic, grated ginger, chopped cilantro, salt, black pepper, cumin, and paprika. Mix until well incorporated.
Form the Meatballs
Shape the mixture into small meatballs, about 1 inch in diameter, and place them on a lined baking sheet.
Cook the Meatballs
Preheat the oven to 400°F (200°C). Bake the meatballs for 20-25 minutes, or until they are cooked through and golden brown.
Curry Sauce
Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and grated ginger, and sauté for another 2 minutes.
Add Tomatoes and Coconut Milk
Stir in the crushed canned tomatoes and coconut milk. Mix well.
Season the Sauce
Add the curry powder, salt, and black pepper. Bring the mixture to a simmer and cook for about 10 minutes, allowing the flavors to meld.
Combine Meatballs and Sauce
Once the meatballs are cooked, add them to the sauce and gently coat them. Simmer for an additional 5 minutes.

In a small bowl, combine the grated cucumber, yogurt, lemon juice, and salt. Mix until well combined.
