Preparation

    Prepare the Vegetables

    Chop the onion, carrots, and celery into bite-sized pieces. Mince the garlic cloves.

    Season the Roast

    Rub the chuck roast with salt and black pepper on all sides.

Cooking

    Sear the Roast

    In a large pot or Dutch oven over medium-high heat, add a tablespoon of oil. Once hot, sear the chuck roast for about 4-5 minutes on each side until browned. Remove the roast and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, carrots, celery, and minced garlic. Sauté for about 5 minutes until the vegetables begin to soften.

    Add Broth and Herbs

    Return the seared roast to the pot. Add the beef broth, bay leaves, and thyme. Bring to a simmer.

    Slow Cook the Roast

    Cover the pot and reduce heat to low. Let it cook for about 3-4 hours, or until the meat is fork-tender.

Assembly

    Shred the Meat

    Once the roast is done, remove it from the pot and shred the meat using two forks.

    Slice the French rolls in half. If desired, lightly toast them.
