Prepare the Filling
1. Cook the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced bell pepper, red onion, and jalapeño (if using). Sauté for about 5-7 minutes or until the vegetables are tender.
2. Add Chicken and Seasoning
Stir in the shredded chicken, chopped cilantro, salt, and black pepper. Cook for an additional 2-3 minutes until everything is heated through. Remove from heat and set aside.
3. Mix in Cheese
Once the filling mixture has cooled slightly, add 2 cups of shredded cheese and mix until well combined.
Assemble the Quesadillas

Lay out the large flour tortillas on a flat surface. Divide the filling evenly among the tortillas, placing it on one half of each tortilla.
5. Fold and Cook
Fold the other half of the tortilla over the filling to create a half-moon shape. Heat a non-stick skillet over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
6. Slice and Serve
Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve warm with sour cream, guacamole, and salsa on the side.
