Method

Filling Preparation

  1. 1

    Caramelize the Onions

Peel and thinly slice the yellow onions. In a large skillet, heat the butter and olive oil over medium heat.

  2. 2

    Add Onions and Season

Add the sliced onions to the skillet, sprinkle with salt and sugar, and stir well. Cook for 30-35 minutes, stirring occasionally, until the onions are caramelized and golden brown.

  3. 3

    Add Flavorings

Stir in the thyme leaves and balsamic vinegar, cooking for an additional 2-3 minutes. Remove from heat and let cool.

  4. 4

    Mix in Cheeses

Once the onion mixture has cooled, combine it with the cream cheese and grated Gruyère cheese in a bowl. Mix well until fully combined.

Pastry Preparation

  1. 5

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 6

    Prepare Puff Pastry

On a lightly floured surface, roll out the puff pastry sheets to about 1/8 inch thick. Cut each sheet into squares (approximately 4x4 inches).

  3. 7

    Fill Puff Pastry

Place about 1 tablespoon of the onion and cheese mixture in the center of each square. Fold the corners of the pastry over the filling to create a pocket and pinch to seal.

  4. 8

    Egg Wash

In a small bowl, whisk together the egg and water to create an egg wash. Brush the tops of the pastry puffs with the egg wash.

  5. 9

    Bake

Arrange the puffs on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed.

  6. 10

    Cool and Serve

Remove from the oven and let the pastry puffs cool for a few minutes before serving warm.
