Preparation of Fries
1. Wash and Cut Potatoes
Wash the Russet potatoes thoroughly under running water. Peel them if desired, then cut each potato into thin strips, about 1/4 inch thick.
2. Soak Potatoes
Place the potato strips in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.
3. Drain and Dry
After soaking, drain the water and spread the potato strips on a clean kitchen towel. Pat them dry to remove excess moisture.
Frying
4. Heat Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
5. Fry Potatoes
Carefully add the dried potato strips to the hot oil in batches. Fry them for about 5-7 minutes or until they are golden brown and crispy. Do not overcrowd the pot.
6. Drain Excess Oil
Use a slotted spoon to remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.
7. Season with Salt
While the fries are still hot, sprinkle salt over them to taste.

8. Mix Seasoning
In a small bowl, combine the paprika, onion powder, garlic powder, cayenne pepper, black pepper, thyme, and oregano. Mix well.
9. Season the Fries
Once the fries are drained, sprinkle the Cajun seasoning mixture over them while they are still hot. Toss gently to ensure even coating.
Serving
10. Serve Hot
