Preparing the Ribeye

    Season the Ribeye

    Rub the ribeye steaks with olive oil, garlic powder, salt, and black pepper. Sprinkle fresh rosemary on both sides. Let it sit at room temperature for 30 minutes.

    Preheat the Grill

    Preheat your wood grill to medium-high heat (about 400°F or 200°C). Make sure the grill grates are clean and well-oiled.

    Chop the Vegetables

    Cut the bell peppers, zucchini, and red onion into bite-sized pieces. Place them in a large mixing bowl.

    Season the Vegetables

    Drizzle the chopped vegetables with olive oil, then sprinkle with salt, black pepper, and dried thyme. Toss until evenly coated.

    Roast the Vegetables

    Spread the seasoned vegetables on a baking sheet and roast in the oven at 425°F (220°C) for 20-25 minutes, or until tender and slightly caramelized.

Grilling the Ribeye

    Place the ribeye steaks on the preheated grill. Grill for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.
