Method
Coffee Chocolate Mousse

Prepare Gelatin
Soak gelatin sheets in cold water for about 5 minutes until softened. Remove and squeeze out excess water.

Melt Chocolate
In a heatproof bowl, melt dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat.

Combine Coffee and Sugar
Stir espresso and sugar into melted chocolate until dissolved.

Incorporate Gelatin
Add softened gelatin into the chocolate mixture, stirring until fully dissolved.

Whip Cream
In a separate bowl, whip heavy cream to soft peaks and fold it into chocolate mixture until fully combined.

Chill Mousse
Pour mousse into serving glasses and refrigerate for at least 2 hours to set.
Caramel Center

Add Cream and Butter
Remove from heat and carefully add heavy cream and butter, stirring until smooth. Allow to cool slightly.

Fill Mousse
Once the mousse has set, create a small hole in the center of each mousse and fill it with caramel.
Chocolate Cake

Preheat Oven
Preheat your oven to 180°C (350°F) and grease a small cake pan.

Mix Dry Ingredients
In a bowl, sift together flour, cocoa powder, baking powder, and sugar.

Combine Mixtures
Gradually add wet ingredients to dry ingredients and mix until just combined.

Melt Chocolate
In a heatproof bowl, melt dark chocolate over simmering water until smooth.

Combine and Heat Mixtures
Gradually pour melted chocolate into egg yolk mixture, stirring constantly. Then, add heavy cream and mix well.

Cook Mixture
Transfer mixture to a saucepan and cook over low heat until thickened. Remove from heat and let cool.

Pour into serving dishes and refrigerate until set, about 2 hours.
Amarula Ice Cream

Combine Ingredients
In a mixing bowl, combine heavy cream, sweetened condensed milk, and Amarula liqueur.

Whip Mixture
Using an electric mixer, whip the mixture until it thickens and soft peaks form.

Freeze Ice Cream
Transfer to an airtight container and freeze for at least 4-6 hours until firm.
