Preparing the Lamb Chops
1. Marinate the Lamb Chops
In a bowl, combine olive oil, minced garlic, salt, black pepper, fresh rosemary, and lemon juice. Mix well to combine. Add the lamb chops to the bowl, making sure they are well-coated with the marinade. Cover and refrigerate for at least 30 minutes.
2. Grill the Lamb Chops
Preheat your grill to medium-high heat. Remove the lamb chops from the marinade and discard the marinade. Place the lamb chops on the grill and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired level of doneness. Let them rest for a few minutes before serving.

3. Prepare the Herb Mixture
In a food processor, add fresh mint leaves, parsley leaves, and minced garlic. Pulse until finely chopped.
4. Combine Ingredients
Add red wine vinegar, olive oil, salt, and black pepper to the herb mixture in the food processor. Pulse a few more times until well combined but still slightly chunky. Taste and adjust seasoning if needed.
