Preparation of Chicken

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Prepare Chicken

    Remove any giblets from the chicken. Pat the chicken dry with paper towels.

    Season Chicken

    Rub the olive oil all over the chicken. Season generously with salt, black pepper, garlic powder, and fresh rosemary both on the skin and inside the cavity.

Vegetable Preparation

    Chop Vegetables

    Peel and chop the carrots, potatoes, onion, bell pepper, and zucchini into chunks.

    Arrange Vegetables

    Place the chopped vegetables in a large roasting pan. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.

Roasting

    Combine Chicken and Vegetables

    Place the seasoned chicken on top of the arranged vegetables in the roasting pan.

    Roast Chicken

    Roast the chicken and vegetables in the preheated oven for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the juices run clear.

Making Gravy

    Prepare Gravy Base

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until it forms a roux.

    Add Chicken Broth

    Gradually whisk in the chicken broth to the roux. Bring to a boil, then reduce the heat to simmer until thickened, about 5-10 minutes.

    Season Gravy

    Season the gravy with salt and black pepper to taste.

    Once the chicken is done roasting, let it rest for 10 minutes before carving. Serve the chicken with the roasted vegetables and gravy.
