    Prepare the Steak

    Season the ribeye steaks generously with salt and black pepper on both sides. Allow them to sit at room temperature for about 30 minutes before cooking.

    Prepare the Garlic Butter

    Melt the butter in a small saucepan over low heat. Add minced garlic and cook until fragrant, about 2 minutes. Remove from heat and stir in chopped parsley. Set aside.

    Prepare the Fries

    Peel the russet potatoes and cut them into thick fries. Rinse them in cold water to remove excess starch, then pat them dry with a paper towel.

Cooking

    Cook the Fries

    In a large pot, heat the vegetable oil to 350°F (175°C). Carefully add the fries in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.

    Cook the Steak

    In a large skillet, heat olive oil over medium-high heat. Add the steaks and cook for about 4-5 minutes on each side for medium-rare, or longer depending on your desired doneness. Baste the steaks with the garlic butter for added flavor during the last minute of cooking.

    Serve the Dish

    Slice the steak against the grain and plate alongside the fries. Drizzle the garlic butter over the steak and garnish with additional parsley if desired.
