Short Rib

    Prepare the Beef

    Season the short ribs with salt and black pepper on all sides.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear until browned on all sides, about 8-10 minutes. Remove short ribs and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and minced garlic. Sauté until soft and fragrant, about 3-4 minutes.

    Braise the Ribs

    Return the short ribs to the pot. Add beef broth, red wine, and thyme. Bring to a simmer, cover, and reduce heat to low. Cook for 2-3 hours or until the meat is tender.

Mushroom Parsnip Purée

    Cook Parsnips

    In a large pot, add chopped parsnips and enough water to cover. Bring to a boil and cook until tender, about 15-20 minutes.

    Sauté Mushrooms

    In a skillet, melt butter over medium heat. Add sliced mushrooms and sauté until browned, about 5-7 minutes.

    Blend Purée

    Drain the parsnips and add them to a blender with sautéed mushrooms, heavy cream, salt, and black pepper. Blend until smooth and creamy.

Red Wine Reduction

    Prepare Reduction

    In a saucepan, combine red wine, beef broth, and minced shallots. Bring to a boil over medium-high heat.

    Reduce Sauce

    Reduce heat and let simmer until sauce thickens, about 15-20 minutes. Stir in butter until melted and smooth.
