Steak Preparation

    Season the Steak

    Generously season the ribeye steak on both sides with salt and black pepper. Let it sit at room temperature for about 30 minutes to allow the seasoning to penetrate.

    Heat the Pan

    In a heavy skillet (preferably cast iron), heat the olive oil over medium-high heat until shimmering.

    Cook the Steak

    Once the oil is hot, carefully place the steak in the skillet. Cook for about 4-5 minutes on one side, then flip and cook for another 4-5 minutes for medium-rare, or until desired doneness.

    Add Aromatics

    If using, add the sprig of fresh rosemary to the skillet during the last minute of cooking for added flavor.

    Rest the Steak

    Remove the steak from the skillet and let it rest on a cutting board for about 5-10 minutes before slicing.

Garlic Mashed Potatoes Preparation

    Prepare the Potatoes

    Peel and cut the potatoes into quarters. Place them in a large pot and cover with cold water. Add a pinch of salt.

    Boil the Potatoes

    Bring the pot to a boil over medium-high heat. Once boiling, reduce to a simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Cook the Garlic

    While the potatoes cook, peel and roughly chop the garlic cloves. In a small saucepan, melt 2 tablespoons of butter over low heat and add the garlic. Cook until fragrant, about 2-3 minutes, then remove from heat.

    Mash the Potatoes

    Once the potatoes are cooked, drain them and return to the pot. Add the remaining butter, heavy cream, cooked garlic, salt, and black pepper.

    Mix Until Smooth

    Use a potato masher or electric mixer to blend the potatoes until smooth and creamy. Adjust seasoning to taste.
