Prepare the Pork Belly
Preheat your oven to 400°F (200°C). Score the skin of the pork belly in a crosshatch pattern, making sure to cut through the skin but not into the meat.

Season the Pork Belly
Rub the pork belly all over with olive oil, then generously season with salt, black pepper, and garlic powder, ensuring it gets into the scored areas.

Roast the Pork Belly
Place the pork belly on a roasting rack in a baking dish. Roast in the preheated oven for about 1.5 hours, or until the skin is crispy and the meat is tender. If the skin isn't crispy enough, increase the temperature to 450°F (230°C) for the last 10-15 minutes.

Rest the Pork Belly
Once cooked, remove the pork belly from the oven and let it rest for at least 15 minutes before slicing.

Peel, core, and chop the apples into small chunks.

Once soft, use a fork or potato masher to mash the apples to your desired consistency—smooth or chunky.
