Cake Base

Method

Making the Cake Base

  1. 1

    Preheat Oven

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.

  2. 2

    Cream Butter and Sugar

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.

  3. 3

    Add Eggs and Vanilla

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  4. 4

    Combine Dry Ingredients

In another bowl, whisk together the all-purpose flour, baking powder, and salt.

  5. 5

    Mix Wet and Dry Ingredients

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  6. 6

    Bake

Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  7. 7

    Cool

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Assembling the Petit Fours

  1. 8

    Cut the Cake

Once the cake is completely cool, cut it into 1-inch squares.

  2. 9

    Fill with Preserves

Slice each square in half horizontally. Spread a layer of fruit preserves on the bottom half and replace the top.

Making the Icing

  1. 10

    Prepare Icing

In a medium bowl, mix the powdered sugar, milk, vanilla extract, and food coloring (if using) until smooth.

  2. 11

    Dip Petit Fours

Carefully dip each filled cake square into the icing, ensuring all sides are coated. Allow excess icing to drip off.

Decorating

  1. 12

    Add Decorations

If desired, roll out marzipan or fondant and cut it into shapes to place on top of the petit fours. Optionally, sprinkle with edible glitter or sprinkles.

  2. 13

    Let Set

Allow the icing to set at room temperature for about 30 minutes before serving.
