Prepare the Pears
Wash and peel the pears. Remove the seeds and cut them into quarters.

After 2 weeks, taste the infusion to see if the flavor is strong enough. If not, allow it to infuse for up to 4 weeks.

Make the Simple Syrup
In a saucepan, combine the water and granulated sugar. Heat over medium until the sugar is completely dissolved, then remove from heat and let cool.

Combine with Infused Vodka
Once the infusion is ready, strain the pear mixture through a fine mesh sieve into a clean bottle, discarding the solids. Add the cooled simple syrup, lemon zest, and vanilla extract to the strained liquid.
Bottling

Bottle the Pear-cello
Pour the Pear-cello into clean glass bottles and seal tightly. Store in the refrigerator or freezer.
