Method

Lemon Verbena Siphon

    Prepare Syrup

    In a saucepan, combine the lemon verbena leaves, water, and sugar. Bring to a simmer over medium heat until the sugar is dissolved. Remove from heat and let steep for 30 minutes.

    Prepare Gelatin

    Soak the gelatin sheets in cold water for about 5 minutes until softened. Squeeze out excess water and add to the warm lemon verbena syrup, stirring until completely dissolved.

    Combine and Chill

    Strain the syrup to remove the leaves and let it cool. Once cool, mix in the whipping cream and transfer to a siphon. Charge with a CO2 cartridge and refrigerate until ready to serve.

Compressed Green Apple

    Prepare Apples

    Core and chop the green apples into small pieces. In a bowl, mix the chopped apples with lemon juice and sugar. Let sit for 10 minutes to marinate.

    Compress Apples

    Transfer the marinated apples to a vacuum bag and seal tightly using a vacuum sealer. Compress for 20 minutes.

    Cut into Shapes

    After compressing, remove the apples from the bag and cut them into desired shapes for plating.

Olive Oil Ice Cream

    Prepare Custard Base

    In a saucepan, heat the milk and heavy cream over medium heat until just simmering. In a separate bowl, whisk together the sugar and egg yolks until pale and thick.

    Temper Eggs

    Slowly pour the hot milk mixture into the egg yolks, whisking constantly. Return the mixture to the saucepan and cook over low heat until it thickens enough to coat the back of a spoon.

    Chill and Freeze

    Remove from heat, stir in the olive oil and salt, and let cool. Once cooled, churn in an ice cream maker according to the manufacturer's instructions.

Honey Granola

    Prepare Granola Mixture

    In a large mixing bowl, combine the rolled oats, chopped nuts, and salt. In a small saucepan, heat the honey and coconut oil until melted.

    Combine and Bake

    Pour the warm honey mixture over the oat mixture and stir until well combined. Spread evenly on a baking sheet lined with parchment paper and bake at 180°C (350°F) for 15-20 minutes, stirring halfway through.

    Cool and Store

    Remove from the oven and let cool completely. Store in an airtight container until ready to serve.
