Steamed Milk Buns

    Prepare the Dough

    In a mixing bowl, combine the all-purpose flour, sugar, active dry yeast, baking powder, and salt. Mix well. In a saucepan, warm the whole milk and melt the unsalted butter together. Add this mixture to the dry ingredients and knead until a smooth dough forms. Cover and let it rise for 1 hour.

    Shape and Steam

    Once the dough has risen, punch it down and divide it into equal pieces (about 10). Shape each piece into a bun and place them in a steamer lined with parchment paper. Steam the buns for about 15-20 minutes until fluffy. Serve warm.

Scallion Pancake

    Make the Dough

    In a bowl, mix the all-purpose flour and salt. Gradually add the hot water and cold water, mixing until a shaggy dough forms. Knead the dough for about 5 minutes until smooth. Cover and let rest for 30 minutes.

    Roll and Fry

    Divide the rested dough into 4 equal pieces. Roll each piece into a thin circle. Brush with vegetable oil and sprinkle with chopped scallions. Roll tightly into a log, then coil into a spiral. Flatten gently. Heat oil in a skillet over medium heat and fry each pancake for about 2-3 minutes per side until golden brown and crispy.

Cornmeal Blini

    Prepare the Batter

    In a bowl, mix the cornmeal, all-purpose flour, baking powder, and salt. In another bowl, whisk together the whole milk and eggs. Combine the wet and dry ingredients and mix until smooth. Let the batter sit for 10 minutes.

    Cook the Blini

    Heat a skillet over medium heat and melt a bit of unsalted butter. Pour batter into the skillet in small rounds (about 2-3 inches in diameter). Cook for about 2-3 minutes on one side until bubbles form, then flip and cook for another 1-2 minutes. Serve warm with your choice of toppings.
