Crab Dashi Custard

    Prepare the Dashi

    In a saucepan, bring the dashi stock to a gentle simmer over medium heat.

    Mix Eggs

    In a bowl, whisk together the eggs, soy sauce, and mirin until fully combined.

    Combine and Cook

    Slowly pour the egg mixture into the simmering dashi stock while stirring gently. Continue to cook for about 5-7 minutes until slightly thickened. Remove from heat and fold in the crab meat.

Puffed Tapioca Furikake

    Cook Tapioca Pearls

    In a pot, bring water to a boil, add tapioca pearls, and cook according to package instructions until translucent. Drain and rinse with cold water.

    Puff Tapioca

    Heat oil in a deep pan to 180°C (350°F). Fry the tapioca pearls in small batches until they puff up and turn golden brown. Remove with a slotted spoon and drain on paper towels.

    Prepare Furikake

    Crumble nori sheets into small pieces, mix with puffed tapioca, sesame seeds, and salt in a bowl. Set aside.

Chirashi Assembly

    Cook Sushi Rice

    Rinse sushi rice under cold water until the water runs clear. Cook rice according to package instructions. Let cool slightly.

    Assemble Chirashi

    In a bowl, layer the sushi rice, followed by crab dashi custard, snow crab, local quail yolks, and a sprinkling of puffed tapioca furikake.

    Garnish

    Top with microgreens or edible flowers for a fresh presentation.
