Method

For the Grilled Salmon

  1. 1

    Prepare the Marinade

In a small bowl, mix together the olive oil, lemon juice, garlic powder, salt, and black pepper.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

  3. 3

    Preheat the Grill

Preheat your grill to medium-high heat.

  4. 4

    Grill the Salmon

Remove the salmon from the marinade and place it on the grill. Cook for 4-6 minutes on each side, or until the salmon is opaque and flakes easily with a fork.

For the Asparagus

  1. 5

    Prepare the Asparagus

Trim the tough ends off the asparagus spears.

  2. 6

    Season the Asparagus

In a bowl, toss the asparagus with olive oil, salt, and black pepper.

  3. 7

    Grill the Asparagus

Place the seasoned asparagus on the grill and cook for 5-7 minutes, turning occasionally, until tender and slightly charred.

For the Hollandaise Sauce

  1. 8

    Melt the Butter

In a small saucepan, melt the butter over low heat. Allow it to cool slightly.

  2. 9

    Whisk the Egg Yolks

In a heatproof bowl, whisk together the egg yolks and lemon juice until pale and frothy.

  3. 10

    Combine Ingredients

Place the bowl over a pot of simmering water, making sure the bottom doesn’t touch the water. Slowly drizzle in the melted butter while continuously whisking until the sauce thickens.

  4. 11

    Season the Sauce

Remove from heat and season with salt and cayenne pepper to taste.
