Duck Breast

    Prepare the Duck

    Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

    Cook the Duck

    Place the duck breasts skin-side down in a cold skillet. Turn the heat to medium and cook for about 6-8 minutes until the skin is crispy and golden. Flip the breasts and cook for another 4-5 minutes for medium-rare. Remove from the skillet and let rest.

    Slice the Onions

    Thinly slice the onions.

    Cook the Onions

    In the same skillet used for the duck, add olive oil and sliced onions. Cook over medium heat, stirring occasionally, until the onions are soft and caramelized, about 10-15 minutes. Add sugar and stir to combine.

Sour Cherry Sauce

    Prepare the Sauce

    In a saucepan, combine sour cherries, red wine, and honey. Bring to a simmer over medium heat and cook for about 10 minutes until the sauce thickens slightly.

Potatoes

    Prepare the Potatoes

    Peel and cut the potatoes into quarters.

    Boil the Potatoes

    Place potatoes in a pot of salted water and bring to a boil. Cook for about 15-20 minutes until fork-tender. Drain.

    Mash the Potatoes

    Return the potatoes to the pot, add butter, salt, and black pepper, and mash until creamy.
