    Hard Boiling the Eggs

    Place the eggs in a saucepan and cover them with cold water. Ensure the water level is about 1 inch above the eggs.

    Bring the water to a rolling boil over medium-high heat. Once boiling, cover the saucepan and remove it from heat. Let the eggs sit for 12-14 minutes.

    After the time has passed, transfer the eggs to a bowl of ice water and let them cool for about 5-10 minutes to stop the cooking process.

Making the Filling

    Peeling the Eggs

    Once the eggs are cool, gently tap each egg on a hard surface to crack the shell, then peel the shells off under running water for easier removal.

    Preparing the Egg Yolks

    Cut each egg in half lengthwise and carefully remove the yolks. Place the yolks in a mixing bowl and the whites on a serving platter.

    Mash the yolks with a fork until smooth.

    Mixing the Filling

    Add mayonnaise, Dijon mustard, pickled mustard seeds, salt, and black pepper to the mashed yolks. Mix until well combined and creamy. Adjust seasoning if needed.

    Finely chop the chives and fold them into the yolk mixture.

Assembling the Deviled Eggs

    Using a spoon or piping bag, fill each egg white half with the yolk mixture.
