Mousse Preparation

Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a pot of simmering water (double boiler method) until smooth. Remove from heat and let it cool slightly.

Mix Egg Yolks
Add granulated sugar and vanilla extract to the egg yolks. Whisk until the mixture is pale in color and slightly thickened.

Combine Chocolate and Yolks
Slowly fold the melted chocolate into the egg yolk mixture until well combined.

Fold in Egg Whites
Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Whip Heavy Cream
In a separate bowl, whip 300 ml of heavy cream until soft peaks form.

Combine Cream with Mousse
Fold the whipped cream into the chocolate mixture until fully incorporated. Transfer the mousse into serving dishes and refrigerate for at least 2 hours until set.

Whip the Cream
In a chilled bowl, whip 100 ml of heavy cream until it begins to thicken.

Add Sugar and Vanilla
Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

Serve
Once the chocolate mousse is set, top each serving with a dollop of whipped cream before serving.
