Cake Preparation

    Preheat the Oven

    Preheat your oven to 200°C (400°F) to prepare for baking the lava cakes.

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals until smooth. Stir until completely melted and well combined.

    Mix Dry Ingredients

    In a separate bowl, whisk together the powdered sugar, all-purpose flour, and salt until well combined.

    Combine Mixtures

    Once the chocolate-butter mixture has cooled slightly, add the eggs and vanilla extract. Whisk until smooth. Gradually fold in the dry ingredients until just combined. Do not overmix.

    Prepare Ramekins

    Grease four ramekins with butter and lightly dust with flour. This helps the cakes release easily after baking.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

    Bake the Cakes

    Place the ramekins on a baking tray and bake in the preheated oven for about 12-14 minutes. The edges should be firm, but the center should be soft and slightly jiggly.

    Cool Slightly

    Remove the cakes from the oven and let them cool for 1-2 minutes. This will help them set slightly for easier removal.

    Invert and Serve

    Carefully run a knife around the edges of each cake to loosen. Invert each ramekin onto a plate and gently lift it off. Serve immediately with a scoop of vanilla ice cream on the side.
