Crust Preparation

Preheat Oven
Preheat your oven to 325°F (160°C).

Mix Crust Ingredients
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand.

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 10 minutes, then remove and let cool.
Filling Preparation

Beat Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until creamy and smooth, about 2 minutes.

Add Sugar and Sour Cream
Add the granulated sugar and sour cream to the cream cheese, and mix until well combined.

Incorporate Vanilla and Flour
Mix in the vanilla extract and all-purpose flour until fully incorporated.

Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

Bake the cheesecake in the preheated oven for 55-60 minutes, or until the edges are set but the center still has a slight jiggle.

Turn off the oven and crack the door open, allowing the cheesecake to cool gradually for about 1 hour. This helps prevent cracking.
