Method

Preparing the Octopus

    Cook the Octopus

    In a large pot, bring water to a boil. Add the octopus and cook for about 45 minutes to 1 hour, or until tender. Remove from heat and let it cool slightly.

    Season and Grill

    Once cooled, cut the tentacles from the body and brush with olive oil, salt, and black pepper. Preheat a grill or grill pan over medium-high heat and grill the octopus for about 3-4 minutes on each side until charred.

    Finish with Lemon

    Remove the octopus from the grill and squeeze fresh lemon juice over the top before serving.

Cooking the Chickpeas

    Prepare the Chickpeas

    Drain and rinse the canned chickpeas. In a skillet, heat olive oil over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.

    Add Spices

    Stir in cumin powder, paprika, salt, and black pepper. Cook for another minute to combine.

    Add Chickpeas

    Add the chickpeas to the skillet and cook for about 5-7 minutes until heated through. Stir in chopped parsley before serving.

Making the Chermoula

    Combine Ingredients

    In a food processor, combine cilantro, parsley, minced garlic, cumin powder, paprika, lemon juice, olive oil, salt, and black pepper.

    Blend and Adjust

    Blend until smooth. Taste and adjust seasoning as necessary.
