Fat Washing the Bourbon
In a small saucepan, melt the Wagyu fat over low heat until it becomes liquid. Combine the melted fat with Buffalo Trace Bourbon in a jar. Seal the jar and let it sit at room temperature for 24 hours to infuse the flavors.

Strain the Bourbon
After 24 hours, place the jar in the freezer for about 4 hours or until the fat solidifies on the surface. Remove the jar from the freezer, strain the bourbon through a fine mesh strainer or cheesecloth to remove the solidified fat. The result is a fat-washed bourbon with a unique flavor.

Prepare the Oleo-Saccharum
In a mixing bowl, combine Demerara sugar and water. Stir until the sugar is dissolved. Add the zest from an orange and muddle gently to release the oils. Let the mixture sit for at least 30 minutes to allow the flavors to meld.

Combine Ingredients
In a mixing glass, add 60 ml of the fat-washed bourbon, 30 ml of the prepared oleo-saccharum, 2 dashes of Angostura bitters, and 2 dashes of orange bitters. Stir gently with ice until well chilled.

Prepare for Smoking
Using a smoke gun or a small smoker, fill it with wood chips and prepare for smoking. Place the cocktail mixture into a rocks glass.

Smoke the Cocktail
Using the smoke gun, infuse the prepared cocktail with smoke for about 30 seconds to a minute, depending on how smoky you want the drink.

Serve
Garnish with an orange twist and serve immediately.
