Prepare the Tortilla Chips
Cut each corn tortilla into 6 triangles. Heat vegetable oil in a large skillet over medium heat. Once hot, add the tortilla triangles in batches and fry until golden brown and crispy, about 2-3 minutes per batch. Remove from oil and place on paper towels to drain. Season with salt.
Make the Salsa
In a large bowl, combine diced tomatoes, minced jalapeños, roasted and diced poblano pepper, minced garlic, chopped cilantro, and finely chopped red onion. Add lime juice and salt, and mix well. Adjust seasoning to taste.
Serve
Serve the tortilla chips warm alongside the homemade salsa for dipping.
