Prepare the Vegetables

In a skillet over medium heat, add a little oil and sauté the sliced mushrooms, onion, and green peppers (if using) until they are softened and caramelized, about 5-7 minutes. Set aside.

Assemble the Sandwiches

Slice the French rolls or baguettes in half. Layer the thinly sliced prime rib evenly on the bottom half of each roll. Top with the sautéed vegetables (if using) and sprinkle shredded Monterey Jack cheese over the top.

Melt the Cheese

Place the assembled sandwiches on a baking sheet and broil them in the oven for 2-3 minutes, or until the cheese is melted and bubbly.

Serve with Au Jus

While the sandwiches are broiling, heat the beef broth or au jus in a small saucepan until warmed through. Serve the sandwiches hot with a small bowl of au jus for dipping.
