Marinate the Chicken
In a large bowl, combine olive oil, soy sauce, lime juice, honey, minced garlic, grated ginger, and black pepper. Whisk until well combined. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

Grill the Chicken
Preheat the hickory grill to medium-high heat. Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken for 6-7 minutes on each side, or until fully cooked and juices run clear. During the last few minutes of grilling, top each breast with Monterey Jack and cheddar cheese. Close the grill lid to melt the cheese.

Serve
Remove the grilled chicken from the grill and let it rest for a few minutes. Top with diced tomatoes and sliced green onions before serving.
