Prepare the Ingredients
Gather all the ingredients. If using smoked turkey, slice it into manageable pieces.

Assemble the Sandwich
Spread Thousand Island dressing on one side of each slice of pumpernickel bread. Layer corned beef or smoked turkey, sauerkraut, and Swiss cheese on two slices. Top with the other slices of bread, dressing side down.

Grill the Sandwich
Heat a skillet over medium heat and melt 1 tablespoon of butter. Place the assembled sandwiches in the skillet and grill for about 4-5 minutes until golden brown. Add the remaining butter to the skillet and flip the sandwiches. Grill the other side for another 4-5 minutes until the cheese is melted and the bread is crispy.

Serve
Remove the sandwiches from the skillet, slice in half, and serve hot with extra Thousand Island dressing on the side.
