    Prepare the Vegetables

    Preheat your oven to 425°F (220°C). Wash and chop the carrots, bell peppers, zucchini, and red onion into bite-sized pieces.

    Season the Vegetables

    In a large bowl, combine the chopped vegetables with olive oil, salt, black pepper, and dried oregano. Toss well to ensure the vegetables are evenly coated.

    Roast the Vegetables

    Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.

    Make the Garlic Confit

    While the vegetables are roasting, prepare the garlic confit. In a small saucepan, combine the garlic cloves with enough olive oil to cover them completely. Cook on low heat for about 30-35 minutes until the garlic is soft and golden.

    Once the vegetables are done, remove them from the oven and drizzle the garlic confit over the top. Toss gently to combine and serve warm.
