    Prepare the Tagine

    In a large pot or tagine, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic, diced carrot, zucchini, and bell pepper. Cook for another 5-7 minutes until the vegetables soften.

    Add the chickpeas, diced tomatoes, vegetable broth, cumin, cinnamon, coriander, salt, and pepper. Stir to combine and bring to a simmer.

    Reduce the heat, cover, and let it cook for 20-25 minutes, stirring occasionally until vegetables are tender.

    Prepare the Couscous

    While the tagine is simmering, prepare the couscous according to package instructions.

    Usually, this involves bringing 1 cup of water to a boil, adding the couscous, covering, and removing from heat for about 5 minutes.

    Fluff the couscous with a fork and serve it topped with the vegetable tagine. Drizzle with chermoula sauce and garnish with crumbled feta cheese and a spoonful of apricot chutney.
