Salad Preparation

Roast the Beets
Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet. Roast for 45-60 minutes until tender. Allow to cool, then peel and slice.

Prepare the Apples
Core and slice the Honeycrisp apple into thin wedges.

Fry the Sourdough
In a skillet, heat the duck fat over medium heat. Once hot, add the sourdough slices and fry until golden and crispy on both sides. Remove and let drain on paper towels.

Make the Salad
In a large bowl, combine the mixed greens, roasted beet slices, and apple wedges. Crumble the burrata cheese on top.

Add Seeds and Dressing
Sprinkle the sesame, sunflower, pumpkin, and flax seeds over the salad. Drizzle with cider vinaigrette to taste and toss gently to combine.

Serve
Plate the salad, garnishing with the crispy duck fat fried sourdough. Serve immediately.
