Preparation
Cook the Meat
In a skillet over medium heat, cook your choice of meat (chorizo, bacon, or sausage) until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
Prepare the Salsa
While the meat is cooking, prepare your tomatillo salsa and red chili sauce. You can use store-bought or homemade versions.
Fry the Tortillas
In the same skillet used for the meat, lightly fry the corn tortillas for about 30 seconds on each side until they are warm and slightly crispy. Set aside.

Assemble the Huevos Rancheros
On each tortilla, layer the cooked meat, followed by a fried egg, then generously spoon over the tomatillo salsa and red chili sauce.
Add Toppings
Top with sliced avocado, chopped cilantro, and crumbled feta cheese.
