Preparing the Sopapillas

    Mix Dry Ingredients

    In a large mixing bowl, combine the flour, baking powder, salt, cinnamon, and granulated sugar. Mix well.

    Add Water

    Gradually add the warm water to the dry ingredients, mixing until a dough forms.

    Knead the Dough

    Knead the dough on a floured surface for about 5 minutes until smooth and elastic.

    Rest the Dough

    Cover the dough with a clean kitchen towel and let it rest for 30 minutes.

Cooking the Sopapillas

    Heat Oil

    In a large, deep skillet or pot, heat the oil over medium heat until it reaches 350°F (175°C).

    Roll Out the Dough

    Divide the rested dough into small balls. On a floured surface, roll each ball out into a circle about 1/4 inch thick.

    Fry the Sopapillas

    Carefully place the rolled dough into the hot oil. Fry until they puff up and turn golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Cooking the Eggs and Bacon

    In a skillet, cook the bacon over medium heat until crispy. Remove and set aside on a paper towel to drain.
