Prepare the Biscuit Dough

Preheat the oven to 425°F (220°C). In a large bowl, mix the flour, baking powder, and salt together. Cut in the cold butter until the mixture resembles coarse crumbs.

Add Milk

Pour in the milk and stir until just combined. Do not overmix.

Shape the Biscuits

Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat into a 1-inch thick round. Cut out biscuits using a biscuit cutter or a glass.

Bake the Biscuits

Place the biscuits on a baking sheet and bake in the preheated oven for 12-15 minutes or until golden brown.

Cook the Sausage

In a large skillet over medium heat, cook the ground sausage until browned and cooked through, breaking it up with a spatula.

Make the Roux

Sprinkle the flour over the cooked sausage and stir well to combine. Cook for about 1 minute to remove the raw flour taste.

Add Milk and Seasonings

Gradually whisk in the milk, stirring constantly until the mixture thickens. Add in the diced green chiles, salt, black pepper, garlic powder, and onion powder. Let simmer for a few minutes.

In a nonstick skillet, melt the butter over medium heat. Crack the eggs into the skillet.
