Prepare the Shrimp
In a bowl, soak the shrimp in buttermilk for about 30 minutes.

Mix Dry Ingredients
In another bowl, combine flour, cornmeal, cayenne pepper, salt, and black pepper.

Bread the Shrimp
Remove shrimp from buttermilk, allowing excess to drip off, then dredge in the flour mixture until well coated.

Fry the Shrimp
In a large pan, heat vegetable oil over medium-high heat. Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.

Assemble the Po'Boy
Slice the French bread lengthwise, but not all the way through. Layer shredded lettuce, diced tomatoes, and fried shrimp inside the bread. Drizzle with spicy remoulade sauce.

Serve
Serve immediately while the shrimp are hot.
