    Prepare the Steak

    Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the thinly sliced ribeye steak with salt and black pepper. Add the steak to the skillet and cook until browned, about 3-4 minutes. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and bell pepper. Sauté until softened, about 5 minutes.

    Combine Ingredients

    Return the cooked steak to the skillet with the sautéed onions and peppers. Mix well to combine.

    Melt the Cheese

    Reduce heat to low. Pour the white queso cheese over the beef and vegetable mixture. Allow it to melt, stirring gently to combine.

    Assemble the Sandwich

    Split the hoagie rolls and fill each with the cheesesteak mixture. Top with provolone cheese slices.

    Serve

    Toast the filled sandwiches briefly under a broiler if desired, until the provolone is melted. Serve warm.
