Fried Cod Sandwich Instructions

    Prepare the Cod

    Rinse the cod fillets under cold water and pat them dry with paper towels. Season with salt and black pepper.

    Set Up Breading Station

    In one bowl, place the flour. In a second bowl, whisk together the eggs and milk. In a third bowl, combine the cornmeal with a pinch of salt.

    Bread the Cod

    Dredge each cod fillet in flour, shaking off the excess, then dip into the egg mixture, and finally coat with the cornmeal.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Cod

    Carefully add the breaded cod fillets to the hot oil, frying for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Assemble the Sandwich

    Place a fried cod fillet on the bottom half of each bun, top with a slice of American cheese, lettuce, and tomato slices, then cover with the top half of the bun.
