    Peel the Russet potatoes and cut them into long, thin strips to form fries. Rinse the cut fries in cold water to remove excess starch.

    Soak the fries in a bowl of cold water for at least 30 minutes. This helps to make them crispier when fried.

    Dry the Fries

    Drain the fries and pat them dry with paper towels to remove excess moisture.

    In a large, heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
