Prepare the Fish
Preheat a cast-iron skillet over medium-high heat. Coat the fish fillets with blackening seasoning on both sides. Add a little oil to the skillet and sear the fish for about 3-4 minutes on each side, or until cooked through and flaky.

Make the Bacon Aioli
In a small bowl, mix the mayonnaise with crumbled bacon until well combined. Set aside.

Assemble the Tacos
Warm the flour tortillas in a dry skillet for about 30 seconds on each side. Place a piece of blackened fish in the center of each tortilla. Top with a generous spoonful of bacon aioli, followed by shredded lettuce and diced tomatoes.

Serve
Serve the tacos with crispy tortilla chips and a side of fire-roasted salsa for dipping.
