Method
Cooking Directions
- 1
Prepare the Stuffing
In a skillet, melt 2 tablespoons of butter over medium heat. Add the green onions, celery, bell pepper, and garlic. Sauté until softened, about 3-4 minutes.
- 2
Stir in the crawfish tails, cooked rice, paprika, salt, black pepper, and 1 tablespoon of lemon juice. Cook for another 2 minutes, mixing well. Remove from heat and stir in the fresh parsley.
- 3
Stuff the Redfish
Preheat your oven to 375°F (190°C). Place the redfish fillets on a baking sheet lined with parchment paper. Spoon the crawfish stuffing evenly onto each fillet.
- 4
Bake the Fish
Melt the remaining 2 tablespoons of butter and mix with 1 tablespoon of lemon juice. Drizzle this lemon butter over the stuffed redfish.
- 5
Bake in the preheated oven for about 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- 6
Serve
Serve the stuffed redfish with seasonal accompaniments of your choice.
