    Prepare the Filling

    In a skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant. Stir in the seafood stuffing mix and prepare according to package instructions, adding chopped parsley, salt, and pepper to taste.

    Stuff the Flounder

    Lay out the flounder fillets on a clean surface. Spoon the seafood stuffing onto the center of each fillet. Carefully roll the fillets around the stuffing and place them seam-side down in a greased baking dish.

    Make Lemon Butter

    In a small saucepan, melt the remaining 2 tablespoons of butter. Stir in lemon juice and season with salt and pepper to taste.

    Bake the Flounder

    Preheat the oven to 375°F (190°C). Drizzle the lemon butter over the stuffed flounder. Bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.

    Prepare Seasonal Accompaniments

    While the flounder is baking, steam or roast the seasonal vegetables until tender. Season with salt and pepper.
