    Prepare the Base

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, bell pepper, and celery (the 'holy trinity' of Cajun cooking) and sauté until they are soft, about 5 minutes.

    Add Sausage and Seasoning

    Stir in the sliced Andouille sausage and minced garlic. Cook for an additional 3 minutes, then add the Cajun seasoning, bay leaves, salt, and black pepper. Mix well.

    Build the Gumbo

    Pour in the chicken broth and add the canned diced tomatoes and okra. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes.

    Add Seafood

    After 30 minutes, carefully stir in the shrimp and crab meat. Cook for an additional 5-7 minutes, until the shrimp are pink and cooked through.

    Serve

    Remove the bay leaves. Serve the gumbo over cooked white rice and garnish with sliced green onions.
